Recently my friend shared a healthy toddler (and why not adult?!) snack recipe that sounded so easy and delicious that I had to try it straight away – and I wasn’t disappointed. So I thought why not share the love here on the blog as well!
The recipe is so simple that I can remember it by heart.
- 3 tbsp coconut oil
- 2 tbsp peanut butter (or any other nut butter)
- 3 tbsp honey
- 125 g oats
- 100 g chopped strawberries
Preheat the oven to 180 degrees. Melt the coconut oil and mix it with the nut butter and honey. I used crunchy peanut butter which gave the bars a nice crunch. Add the oats and strawberries, mix and press down into a 20×20 cm lined dish. Cook in the middle of the oven for 15 minutes and let it cool until it’s room temperature. Then put into the fridge for at least 30 minutes before cutting. Store the bars in the fridge.
I’m sure you can use blueberries or raspberries instead of strawberries – and also perhaps add some seeds and nuts. And cinnamon maybe? I’ll probably also make a double batch next time as you don’t really get that many bars out of one batch. Also, if you substitute the honey with a vegan option such as maple syrup or agave these are vegan too!
