I always find it difficult to find good recipes for starters, so when I was making stuffed courgette rolls the other night I decided to share the recipe here in case anyone else has the same problem!
The stuffed courgette rolls are really tasty, healthy and easy – so easy that there’s no cooking involved. Plus they’re vegetarian! All you need is:
- 4 small courgettes, ends trimmed
- 3-4 tbsp olive oil, plus extra to drizzle
- 3-4 tbsp balsamic vinegar, to drizzle
- 250g tub ricotta
- squeeze of lemon juice
- handful of fresh basil leaves, chopped
- 50g pine nuts, toasted

This is a great summer dish and the rolls work well as nibbles as well. That’s Lana waking up from her nap, gotta go!
